Dragon Pearls "Long Zu" is a green tea that is harvested from northern Fijian;s "Da Hao" white tea bush varietal.  Silvery tipped, spring harvested buds and tender leaf flushes are processed using techniques borrowed from white tea and green tea production.The silvery buds are partially withered, lightly fired, wilted and baked to fix the quality and silvery-white appearance.  The tea is then moistened with light steaming until pliable so the pearls can be rolled into shape by hand.  The process is labor intensive and each pearl is hand-rolled one at a time.  Dragon Pearls yield a smooth body akin to white tea with the rich, semi-sweet flavor of roasted chestnuts.  Should be infused multiple times.

A Specially baked tea produced in the spring and winter.  Also known as Tae Guan Yin is the most famous oolong tea.  This special grade of tea is hand-harvested from the soft stem Wu-Yi tea bush that is descended from the original tea bushes introduced to Taiwan from Fuji an in the 19th Century.  Made according to the traditional Tae Guan Yin oxidation and bamboo coal baking techniques developed in China's Fuji an province.  Our Iron Goddess of Mercy has a light golden-amber infusion with a smooth body and sweet finish.  Its aroma is profoundly reminiscent of baked grain and dried apricot.
